Deep-frying a turkey should always be done outdoors. Your surface area where you put the turkey fryer should be clean and flat. And it should be a non-flammable surface.
If you have one, a cement patio can be a great place to fry a turkey.

There are a couple of indoor fryers available as well.
Just remember that they are really big and you need a place to put them.
